Using this sequence, Analog TV > Bluetooth Transmitter>Bluetooth Receiver>Panasonic Mixing Desk, will I be able to play the TV audio through my mixer?

May seem a silly question, just trying to do it basically for nothing, and I'm not sure about the communication limits between the transmitter and receiver.

In principle, yes. However there will very likely be a lag between video and audio.

My experience with standalone transmitters and receivers is they generally need to pair with something with an interface like a phone or set of headphones with a pairing button.

I got 2 and they would just not talk to each other because they each needed the other device to do something.

Also you will get lag, low quality and dropouts. There are better wireless audio technology than that for sending things in a professional situation.

Mate used some of these https://www.rapalloav.co.nz/product/audioengine-w3-au-wireless-audio-adapter-set/?v=d76c77a873e2 but I had no idea they cost so much! Looks like the sort of thing that should be 25% the price.

The worked great, even in a room full of other 2.4GHz stuff the sound was rock solid. Bluetooth was too laggy, those senders were great. It was playing on some other speakers and you couldnt hear the latency when standing between them. Perhaps slightly but it wasnt the massive reverb effect that bluetooth sender to bluetooth speaker ended up with.
