I want to find where an ipod touch stores the contacts file?

Anyone know?

In fact I am really interested in where it stores other data too like emails.

I assume you can view the files on the disk when the ipod is plugged into a computer just like any other storage device?

iPod Touch and iPhone do not mount like a regular filesystem on removable drive (flash).
There are some applications that can be installed to connect to and browse the file system on the device.  What operating system are you using on your computer?
