Is there no simple device that only communicates with Matter devices and relays it to e.g. Home Assistant, Home app, etc?

I discovered the google nest hub works and is the only device I have got that works as a hub. Most people should have a least one exisiting device the can use. It is actually cheaper to get a philips hue hub second hand though if one was to go the philips hue route, which IMO is easier and more robust, but has a higher cost for devices. Also the light quality IMO is better.   I understand philips also is bringing out a range of bulbs.

Has anyone actaully go the IKEA wheel button to work with the Google Hub and app? I am thinking I might have to return mine due to the problems it has.

I have given up on the motion sensors where I had placed them because they are far to sensitive for outdoor or indoor but facing towards a window use. Back to the $6 wifi tuya ones.

An Apple TV is another good dual-use option for a border router. It's what I'm using

Been a while since I've had a Apple TV. Are there any apps on the Apple TV that can play video files from a local Samba server? I seem to recall it being fairly locked down and only able to do Netflix, YouTube, etc. The VLC app on Android TV has this function which our household uses daily. All the TV in our household have Smart TV functions built in too though 99% of our usage is VLC/Samba or linear DTV.

I think @richms suggestion of just getting IKEA's router thingy is probably the best path for us. Ethernet is fine, we are already a wired-if-possible household with Ethernet ports/switches/etc in all our main rooms. $149 is a bit steep but I guess still cheaper than the alternatives. Another IKEA trip for me!

Apple TV has had its own App Store for a number of years now, so you can get VLC on the Apple TV now. The easiest way, on any platform, to get local media to a device is with something like Plex or Jellyfin tho - VLC is a bit clunky. But, that's off the topic of Ikea devices 😉
