Canvas is probably a safe choice, since its more or less their framework theme and its easily customized. Have done a lot of different design implementations based on Canvas.

One of the things that really bugs me is when a developer changes the themes around a lot (breaking previous behavior and features). It makes doing updates of themes to a real chore and minefield. Woothemes have actually gotten pretty good at not breaking stuff in their updates.
