Ragnor: Yeah I agree helpdesk for an ISP or tech company is probably you best bet for part time work that's somewhat related to network/sys admin.
My advice would also be to learn how to code in useful languages for sys admin adequately eg: sql, wmi and powershell scripting for windows, python for linux etc.
Most businesses in NZ are small and need generalists rather than specialists, broader knowledge with an ability to learn deeper into a particular area if required seems to be the way these days.
+1 And get into VOIP as well, as that is a key skill now for outsourced IT companies (if that's what you want to be).
Im also in ChCh studying at Computer Power, lvl 5 sytems tech followed in the new year by lvl6 Network Engineering. Part of my course requires a 100hr placement at a local IT firm, I have successfully placed with Datacom and if I dont suck I will be bonded to the firm, (saves the job hunting at the end of my studies) They told me that they traditionally hire students to cover the holidays so their regulars can have a decent break, so you may be able talk to someone about at least getting some work experience, and perhaps post holidays haggle in some part time work? Do note that Datacom secured a BIG contract http://www.datacom.co.nz/About-Datacom/News/Datacom-to-launch-Cloud-Services-to-New-Zealand-Go So may be looking strategically at the mid term employment plans!

You are on the right track, you absolutely need to pursue a relevant job, even if the pay is awful to build up your experience and CV.
As a grad the biggest thing that will hold you back is a lack of real world work experience, and the second biggest thing is having an irrelevant CV (e.g. I love Networking but spent the last 5 years making Pizzas).
Personally I wouldn't recommend anything in retail (DSE etc..), it isn't IT and isn't going to help you build your CV.
