Install and run Kies on your PC. Plug your phone into the PC and select upgrade.

If Kies doesn't offer you an upgrade, it is possible to force one on, but you need to do some homework to work out which firmware is the best base to move forward from. In some cases, you MUST have the android SDK installed on a PC so you can use ADB to select which country you want if the "CSC" is a multi-country CSC. If these parts (firmware, modem and CSC) aren't aligned, you often up with a 'soft-brick'....and your phone won't boot as it crashes over and over in a boot-loop.

But there are several defined paths, with instructions, at XDA-developers in the Galaxy S General forum.

But much easier to just use Kies if Kies will do the business for you.
