Just went thru this exercise myself... (replacing a Desire)
And whilst I can recommend a plethora of devices (pretty similar to your list really), what it came down to in the end was what felt good (size wise) in her hand. And it was not just about size but also weight. Folks at work had Sensations' and S-IIs', and even a OneX.

S-II got the $$$ across the counter top, I may have picked something else ;-)

I'm selling my S2 with a few accessories for $1 on trademe. I could do you $570 if you can stretch that far. It is only 2 months old.

I would go for a secondhand S2 at your price point. If you are interested in custom roms then the S2 is your best option as it is very well supported.

I would say you can't go wrong with the Defy+, hell the Defy is under $400 these days and is basically the same phone with a slightly smaller battery.

It works well, the build quality is is great, and it isn't too big.

I've had a Defy for 18 months now and I'm still struggling to justify an upgrade.

It's a phone, it works.

Didn't anybody tell you I was a hacker?

Amen to that.
I've a new S-II sitting unopened in it's box. Everytime I have the Defy in my hand, or it falls out of my shirt pocket, I wonder if the S-II would be as comfortable or if it could take that fall.
I come home and have a play with her S-II, it's light and thin and has a great screen, and I am tempted to break the seal.... if only I could get through a day without dropping the Defy I'd open the S-II box.... Haven't had any luck with that for the last 6 days.

+1 for this. A very good phone, shes not going to be a power user I'm guessing and the sensation really is adequate apps feel fast etc.. ram usage is low and some of the custom rom's will see the phone supported for ages. But even the stock rom is very good.

Can get the HTC Sensation on Trademe for about $500. Good, reliable phone. Sense is the best stock UI you can get.

Sony Ericsson Xperia Ray, ST18a available from DSE $529 for Skinny, but also usable on XT. Good screen 854x480 and good user-available system/internal memory (~300MB) to install apps.
