So I signed up to Lightbox today and then went to my PS3 to load the Lightbox App but can't find it anywhere. I can see the Quickflix App among others but no Lightbox.

My PS3 has the latest updates and my PS account is located in NZ. Is there anything else I'm missing?

You need to go to TV services > My channels and install it from under there.

Would this be available on a Sony Blu-Ray home theatre system? The user interfaces seem similar (from what I can remember of using the PS3) and physically it looks a lot like a PS3.

Sony Blu-Rays use the Sony Smart TV software, not the Playstation stacks (very different beasts). If we release an app for Sony Smart TVs (not saying we will, not saying we won't), it'll also support at least some of their Blu-Rays.
