There isn't really a good SIM for all Europe, so I just went with out when traveling around there. I found 3 fine in the UK.

I think they're mainly concerned with the UK.  Where did you pick up your sim for 3?  At the airport?

You can go into any Vodafone store in the UK and pick up a prepaid SIM very easily.
There is a store a Heathrow T5 otherwise check the map

If you want to order in advace I have also used http://www.0044.co.uk/uk/sim-card.htm which they will send to you in advance which is great if you are in a rush when you land.

If data usage was primarily for the phone with casual iPad usage one of the easiest options is to simply use Vodafone for roaming. Their prices are cheaper than what you'll pay on many UK or European networks which are often capped daily prices for roaming data. If you're paying somewhere in the vicinity of £5 - £8 for 100MB of roaming data per day these costs will start to sky rocket.

Vodafone NZ offer monthy rates which can be used in any country within that zone, and if you use that pack you simply buy a new one. If you want heavy data usage but can do this in fixed locations a WiFi aggregator such as Boingo is the most cost effective option.

Telecom also offer a daily fixed price roaming option, which once again isn't necessarily the best option for longer trips.
