There are a lot of GSM-SIP gateways avaiable on the market: http://www.voip-info.org/wiki/view/VOIP+GSM+Gateways
Afaik there is a software gateway for Asterix, which uses any Bluetooth-connected mobile phone to handle calls.

I got a cheap GSM-SIP gateway from a crowd in Taiwan, which I had my doubts about. It cost about $250, but it seems to be working well and I've got no complaints with it so far - see www.portech.com.tw.

Yes, I use Asterisk on Ubuntu with absolutely no problems at all.
