Recently noticed that all my season pass recordings are appearing as a list and not organized by folders. Did I mash-up a setting? How do I get them to be organized.

Yes there is a setting that controls whether they are in a folders or not. Can't remember where, but it is somewhere there.

I think it tells you what to press at the bottom of the Now Playing screen.

As above.  Go to your "Now Playing" list; then press the "enter/last" button on the remote and up will pop, among other things, the option to turn groups on/off.  Incidentally, you can apparently also toggle between groups being on or off by hitting the number 2 button on the remote as well.  Never tried it as I leave groups on pretty much all the time!!
