fearandloathing: Is scratching really an issue? I use cast iron on a ceramic cooktop, clean it with a scarper, it’s fine.

I don't know. Someone mentioned it earlier in the thread.

I'm using cast iron on ceramic cooktop. No issues with scratching.
Having said that, I wouldn't mind if it did scratch the cooktop - then I'd have a reason to get rid of it. Absolutely hate ceramic cooktops and would never choose myself.

@mdf @Handle9 looks like both the Le Creuset and Baccarat are enamel exterior and interior according to the specs. I've read that enable is hard wearing, doesn't need seasoning, but isn't non-stick and doesn't form the non-stick layer like cast iron does. I'm a bit tired of thinking about frying pans. I'll probably just buy a Tefal every year.

@farcus yeah ceramic are terrible, the worst of both world. Not that hot, glass top isn't as strong and can be scratched. Induction is 10X better.

At the risk of being judged horribly for the state of my frying pan, here are fresh pics of the 6yo cooktop and 20yo frypan.

I cleaned the cooktop specially for the pics, the frying pan had sausages in it seconds before the picture was taken.

Forgot to add. I also don't ever cook tomato based stuff in the cast iron pan. Tomatoes strip it back to bare cast iron.

My mother insists tomato destroys Teflon pans too.

If you've never encountered him before, some of the best advice on frying food comes from Uncle Roger. Haiyaa!

andrewNZ: Cast iron does bake some oil onto the glass, but it's easy to remove with a razor scraper. It doesn't bake it in anywhere near as badly as a ceramic cooktop does.

For dealing with that you can't beat Ceraclen cleaner and protector, the latter leaves a thin layer of silicone over the surface which stops stuff from baking into it.

Thanks @andrewNZ, both looking good for their age :) Few scratches on that cooktop but not much. Mine's six years old and no scratches at all, just a bit of slight discoloration on the element we use the most.

We recently purchased a bunch of Le creuset cast pans, pots, casserole cookware. They are awesome . We have not had any sticking or burning. They clean easily and look great for serving. The quality means we won't need to replace them.

Here is a crazy notion, lets give peace a chance.

Which type @MikeB4? Can you link to them? Or describe them - enameled cast iron outside and inside the cookware?

I'm happy to pay for expensive cookware if it actually lasts. Circulon was fairly expensive and only lasted a little longer than cheaper Tefal stuff.

Thanks Mike. I'm going to get one of their 26cm enameled skillets to see how I like it. To fully outfit with their stuff might need a second mortgage ;)

This one is pretty great too, where Uncle Roger cooks. And he liked Gordon Ramsy fried rice.
