What would the price be for a new single car garage with bathroom being built on an existing section in Auckland? Any estimates?

You would probably start at $30k and go up from there. A lot depends on how flat you section is and how far services have to be run.

need more details

do you need to run services, do you need a concrete slab, do you want a kitset one from the likes of versitile, skyline?

I prices up a standard kitset double garage (7.2x7.2) for our place and it was going to be about 35k and that didnt include any services (power or water). That included consent, slab, transport, and build.

Good point, I guess my thinking was that usually there's a house pretty close to a garage. The use cases you propose are starting to get more into gottage territory in my opinion, so I hadn't really considered them.
