Does anyone know of contacts that can do under home Ethernet cabling? This would be to at least five rooms.

Here is a crazy notion, lets give peace a chance.

Many electricians will do it - look for one who has all the right tools (termination and testing tools) plus experience in the area. My local electrician has one guy who does it.

The crawl space under my home is cosy, the complication is the home is a Lockwood solid timber home so the installer needs to be experienced with them.

Use a proper cabling company not a electrician, while most know how to do it the workmanship i have seen from most installs done by electricians has been far from impressive i.e. cables held in place with nails might work for TPS but voids any warranty with most CAT5 and CAT6 cabling.

You could try nocowboys if you don't get a recommendation here. I would agree re:electrician. Of course it always depends on the individual but it is different job. Why not DIY? With a bit of research you can do a good job if you're handy.

Probably not possible to get the wires in the walls, and ceilings in a true lockwood. So under the house maybe the only option.
