We are looking to retrofit our house lot of 50W MR16 12v Halogens with 5w MR16 LED's. We have one electronic transformer per light which have a minimum loading wattage of 20w, Specs of the transformers are below

I have changed over 4 or 5 of them so far and they seem to be working ok, but i am concerned about the wattage on each transformer being below the minimum loading. If the lights work, is there still a potential risk in under loading the transformers? We do not have dimmer switches by the way.

If there is, i will bite the bullet and switch each light over to 240v GU10's, but there is no point doing this if not needed

My LEDs all take 230V, they have their own driver unit. What LEDs are you installing?

Eco-Lux 5w from Orbit Lighting . I can't find any spec regarding them have their own driver unit or not

The specs on that link are in German.
Dimmbar = "Dimmable".
My guess is that they won't work properly on a dimming circuit unless there is 20W minimum load, but should be fine otherwise.

Wire multiple LED fittings in parallel to make up (at least) the minimum required for one transformer.  On SELF (safety/separated extra low voltage, which from memory is below 60V) you are allowed to do whatever wiring you want to.  The issue will be what to do with the mains wires that are removed from transformers, which I don't have an answer for.  The legally safest option is to change to a suitable LED transformer at each fitting, the original ones are not rated for a light load and could either have a reduced life or cause interference or both.
