Replacing an old dimmer switch and came across two red wires a blue and a white, not sure where to put the cables on the new single normal switch. Anyone know?

I would get a sparky in to install the switch and tidy up that wiring as it looks like there has been some heat in one of the terminations

Red, white and blue are generally used when there is more than one switch on a circuit and, very simplistically, you need more than one phase wire running between the switches. If you aren't aware of this or the ramifications of it, I'd suggest you call a sparky.
