The Sparky has been and set up for the new LED going into our kitchen.

The LED arrived a month Later.

I assume both of each of these 3 pairs of cables go into the LED transformer?

Black for (N)eutral

Red for (L)ive

Green for (E)arth/Ground)

Power off at the mains first of course (Because I know someone will comment :) )

The LED transformer might not have a terminal for the earth (double insulated). If not, then the earth can stay in the connector, either inside the transformer terminal compartment if there is room, or outside the light.

The outer sheath of the cable (white) needs to go into the transformer and be captured by the cable clamp.

The inner red/black cores need to be completely enclosed so that they cannot be seen without removing covers.
