After a minor oops with filling the coffee maker up, I would like to get a valve that only flows when I am pushing it that fits on the normal 1/4" OD plastic stuff.

 

Found this thread which has one brass looking valve without any quick releases on it https://www.reddit.com/r/fixit/comments/kpqtu2/looking_for_a_push_button_water_valve_for_14_ice/ - anyone else found a momenrary small water valve? Even better if it can be panel mounted. grok and similar keep suggesting sketchy looking pneumatic ones which I am certain would have greases and metals in them that are not food contact safe.

I spent a while looking for something similar last year for the bait station on the boat.  I could only those brass ones - not an option for an aluminium boat.  I bought one intending to make a CAD model and have the various bits milled out of aluminium.  Never got around to it.  3D printing might be an option for your use case?
