I see there are a lot of sites out there that claim to be able to sell you digital iTunes gift cards that can be redeemed in the US store, but some of them look dodgier than a really dodgy thing. Does anyone have sites they regularly use for this? I know I could use a retailer like BestBuy, but they don't seem to offer the digital versions anymore.

gehenna: I use http://itunesdirect.com.au

Wait am I reading that site correctly?
They are selling iTunes Gift cards for more than they are actually worth?
EG: a US$15 iTunes card actually costs you US$19.99.

Is this normal?

Yep, you have to pay a fee on top of the actual cost of the card otherwise how does the service selling the card make any money?

So I guess it's still worth it as you are still paying less for the content in the store than if you bought it from the NZ store, if you can even buy it?

Well for a start you get access to TV shows which the NZ store doesn't have. Then you get access to new release movies before NZ gets them. So yep, I don't mind paying a bit more than face value to get access to all that.

That said if I ever end up physically in America I'll be buying up large at face value :)

I use my wife.

She's an Air New Zealand flight attendant so buys them each time she's up there.

Well, I am going to the US in a few weeks, so I'll definitely pick some up then. But I'm an impatient bugger, and I wanted access to Breaking Bad S09-S11 (which I forgot to MySky in time :-)). Currently investigating other options (looking at you, NetFlix UK).
