I used to like meat and hate veges but now I'm the exact opposite. I only like meat when they're perfectly cooked and first thing out of the kitchen. Veges can be a million years old and taste ok with some unhealthy dressing.

But in that case the taste comes from the dressing. 

 

 

 

Most veges aren't that tasty ...

 

Anything leafy, there is generally no flavour or just bitterness.

 

Root vegetables - tasteless mush (exceptions are beetroot and radishes). 

 

The gourd family - generally tasteless mush, capsicum is nice if roasted.

 

Brassicas - smell like socks, taste as I imagine socks would

 

Beans, corn, mushroom and tomatoes have flavour - and chilli of course.

 

I generally just make a quick salad add a fistful of fresh herbs from the garden and lemon juice and force it down as quickly as possible as a first course.  Then I have food I enjoy as a main.

I can't eat fish beef or chicken without out modest amount of at least oil & salt. Most come with more stuff like fats, cream, etc. I can eat fresh veges without anything added, just not the stale ones. Stale meat is worse, nothing will ever make me eat them by choice!

And that's why most of the times people will stir fry or add butter to vegies. Because without fat and spices vegies are just tasteless.

The issue with veges is people tend to cook the hell out of them both in the pot and out of the pot and this dramatically changes the flavour profile. Cook less and stop the cooking immediately by dunking in cold water.

My wife makes really good pumpkin soup without adding much else. She says salt carrots and onions only.

Get her to add a little bit of curry to the pumpkin soup sometimes. It makes a beautiful change. Generally we eat basically just pumpkin pumpkin soup
