I've used Tinned in water ever since I started making it.

 

Do you just used dried and hydrate them in water overnight?

But don't cook them, correct?

 

I do a great KFC Bean Salad using dried beans, soaked overnight then cooked briefly.

I spoke to my brother in the USA this afternoon.

 

They have full access to takeaways and food delivery and he has definitely swallowed the Kool Aid as far as their not-really-a-lockdown-at-all lockdown goes.

They’re not blind exactly. They just focus on different things. Also, it’s a huge place. If 3000 people died here, most people would know one of them. In the US that’s very unlikely.

They’re really focused on things like the fact that J&J have vaccine candidates ready for testing, that someone had designed swift test kits, that huge corporations are spending huge budgets on solving the issues.

We tend not to have that outlook and combined with a small size it makes two very different approaches.

That doesn't make their approach right or better though, does it? They have the highest number of cases in the world at the moment (although I will admit not the highest number of deaths).

 

Trump (IMO) has come across as ineffective and he doesn't know what he's doing/saying. I actually pick this may even cost him the election.

I’ve never seen a recipe for hummus that doesn’t first cook the chickpeas. 

 

Being vege, we use a lot of dried chickpeas, often cook extra and stick them in the freezer. Quickest way (Other than a pressure cooker) is pour boiling water over them, heat until water in pot is boiling and simmer until tender (check by feel and taste).

 

Soaking over-night speeds up cooking but doesn’t stop the need for this, especially since hummus is not actually cooked. Felafel, on the other hand, can be made with uncooked chickpeas given the final product is fried, but we still use cooked (I get indigestion if not!).

Hummus (and baba ghanoush, moutabal and fattoush) is one of the best things about living in the middle east. The stuff in NZ is like NZ gucamole - a poor imitation. I'm not sure what the difference is (I suspect the tahini) but it's like crack.

It's always served with oil on top which also makes it so much creamier.

You can cook them as well for example if you are making a chana dahl.  Indian cooks have had vege only dishes figured out for very long time.

 

Also to get the skins off (for making hummus) drain them and chuck them in pan with some baking soda for few minutes.

I love making Bana Ghanoush. I prefer mine as I do with my Hummus with SOME texture.

 

When I went to France a couple of years ago, we went to Marseille (wow I spelt that right first time!) and in the gardens there, there was a lady selling freshly squeezed orange juice. It was the best fruit juice I ever had, and I remember it vividly. I know it sounds corny, but it figuratively tasted like a glass of sunshine. I think some parts of the world, the food just tastes better. Bread and Cheese in France were also incomparable.

 

Stone Fruit in NZ is very good.

 

We are getting a lot of cross over on the food thought and recipe thread :)
