Waitomo are already on record as saying that they are working on a Johnsonville site next...

But I've not heard any details of what site they are looking at..

Potentially the existing Challenge site is the info i've heard

Definitely the old Challenge site. It is currently in full construction mode and there is a Waitomo Coming Soon banner on the fence.

There was a story in Stuff about this a month or so ago with the guy closing his business but unable to sell it because he only leased it and Waitomo had purchased the site.
