The "sensible fun" option is of course an MX5, outstanding vehicles to drive, totally reliable for daily.
A Morgan has been suggested, and if you have the money, there's no reason it can't be a daily, I drive a Kallista as my daily currently...
which isn't far removed from Morgans, just rarer, slightly cheaper (you pay a lot for that Morgan badge), and aluminium+steel instead of wood, also 2 seats but is a bit of a Tardis the space behind the seats is a lot bigger than you think. There's one for sale on TM at the moment, but they want too much. Mine is a bit rough in the body (paint and the usual assortment of stone chips and dents) which is how I like a daily.
You could go in the other direction, I also have a Daihatsu Midget II which has been my daily and will be again at some point (got to swap them around so they don't think I have favourites after all), you may remember them from Gran Turismo, they are not fast by any stretch of the imagination but what they lack in speed they more than make up for in sheer fun and utility.
