I just saw article on Engadget that says there are now more Uber cars in New York city than ordinary yellow cabs. Made me think - if I was in NYC with the Uber app on my phone (and NZ credit card loaded) would I be able to get a Uber ride? And in other countries/cities?

Yes. That's the great thing about Uber. It doesn't matter where you are the service operates in exactly the same way.
