I have looked into this with Google but cannot get a definitive answer.

 

I believe that with National, Cabinet Ministers are chosen by the PM.  The PM is likely to choose from MPs they relate to.  With Labour I have a recollection that caucus chooses a block of MPs then the PM gets to assign ministerial responsibilities.  The PM therefore must accept whoever the caucus chooses.

 

Am I correct?  Is this defined somewhere?

It's the same in all cases in NZ. The Prime Minister is the head of the government and on that basis selects the cabinet.

I think the party arrangements can take some precedent. 

 

With the whole Louisa Wall thing, there was some mention that Ardern would have chosen a group of people from the party who would then as a group appoint the rest of the cabinet through a voting process. 

 

So maybe it varies with each party. Each Minister, however, serves at the pleasure of the Prime Minister. That is a fairly standard convention regardless of how they are appointed. Again, there may well be a vote at cabinet level to ministerially de-frock someone, but if you're going to overrule your PM on a cabinet demotion then you've probably triggered a spill by-proxy and have bigger problems as a result.
