I am currently running plex on a roku 3 and absolutely love it. 
With Sky loosing the golf I have now bought online golf subscription service but can only watch it on my ipad. 
I could get an appletv and airplay the ipad but I dont really want another device.

Can the Appletv be hacked to run Plex or can a roku be somehow made to airplay an iphone?
I see there are rumours the appletv 4 will be out in June but for for around $100 for an appletv im not too worried.
Any other ideas I could try?

I used PlexConnect before I got a Samsung SmartTV, which I installed the Plex App on.
It was pretty flawless back then, I'm assuming they keep improving it?

Yep. I find it just works. Sometimes the host loses the DNS or server. But I've just swapped it to a Linux machine so hopefully more stable.

Ok, been looking at it and going to cancel sky today and sell my roku on trademe.

Well got an appletv. Its ok and runs pgatourlive but wont airplay skygo, tvnzondemand or 3ondemand so really bummed

I think TVNZOndemand / 3OnDemand will be available on ATV in the near future. Their exclusive deal with Samsung won't last past the TV companies next tech update for their streaming services IMHO. When the deal was originally made, it was really only a Quickflix / TVNZOnDemand marketplace. But with the arrival of Lightbox + Netflix... exclusivities seem to be hurting more than hindering.

As a cheap fix could you not buy an apple AV cable to plug the ipad into a TV hdmi port and play direct from the ipad?

Unfortunately I think you'll find that the device is smart enough to know that it shouldn't be sending certain content via Airplay OR the AV adapter.

You'll probably still get your money's worth from the ATV - I use it for Netflix, Hulu (geo-unblocked) and YouTube, and I'm thinking of subscribing to Willow TV as well. It does a really nice job.

I just got a little $200 Minix Neo Z64 Windows box for streaming sites like TVNZ and TV3 that don't allow AirPlay, and so far I'm very happy with it. Just watched an Ep of Big Bang Theory and it looked great.

When the new Apple TV comes out later this year I'm hopeful that the open-to-developers App Store on it will mean more streaming apps for local content like Lightbox and TVNZ. At the moment my streaming is spread over 3 devices (ATV, PS3 and Minix box). It would be nice to be able to consolidate a bit.

Yeah we are using netflix on the appletv but it worked on the roku as well. I am airplaying plex which seems work fine so will ditch the roku 3. WIll look in the the neo. Do you know if Skygo works on it?

The Neo is basically a full Windows 8.1 computer, so I can see no reason why SkyGo shouldn't work on it. If it works on a normal PC, it should work on the Neo. I can't test it because I cancelled my Sky last month. If I remember tonight I'll ask my parents if I can nick their Sky login details and try it out - they don't use the Internet functionality so I may as well :)
