Ok so Apple TV 4 has no optical audio out. What gizmo bit do I need to feed the HDMI into to extract the optical audio to feed into my old steam Bose?!

You need an HDMI audio stripper. Most will give you the choice to break out as optical or digital coax.

Just watch that you get one that will pass a bitstream out. I had one that would always report itself as being stereo only, so it would only ever get stereo from the source.
