I just bought a Samsung QN90B which is connected to my Sony STR-DN1080 receiver via HDMI eARC which is in turn connected to a PS5 and a Nintendo Switch. Is there a way to configure it so that when I want to play PS5 or Switch it will set the receiver to the correct input? I can’t figure it out. I can get the TV to change to the HDMI that the receiver is on, but I thought it could change the input of the receiver too? Anyone have any experience with configuring inputs on newer Samsung TVs?

HDMI CEC isn't capable telling the receiver to change to a different HDMI input. If you turn the TV on it is capable of turning the receiver on and switching the receiver to the eARC input but it can't with to another HDMI input.

In your case most people would use the receiver remote as a master to control the basic functions of the TV through HDMI CEC.
