I have decided to uninstall SP3 and re-install SP2.  I have never uninstalled/installed Service packs..

What exactly do I need to backup? Photos, Word documents, music, videos, etc?? or would
these files not be influenced??

Whenever you're doing service pack up/downgrades you should backup ANYTHING and EVERYTHING you care about, photos, music, videos, documents etc. Service packs can be volatile and cause major errors, downgrades are even more likely to do so.

Once you've backed up all your data just go into ADD/REMOVE PROGRAMS in control panel to remove the Service Pack. Then after the reboot, hope it comes back up.
