In our experience, they are more susceptible to RF interference which will cause the Modem and ONT to re-negotiate down to 100mbit.
If it works for you though all the better :) they are meant to work and i have seen them work fine but i've also seen them be the cause of exactly this.
so i Prefer to play it safe and go hey just use the cable that came with the modem itself.
A quick query of API's confirms if this is or isnt the case anyway.

Another thing I would try is when you see a slow test happen, try running a test to fast.com as well and see if that also reports slower than expected speeds.
No speedtest is 100% reliable and that's even more the case when they are hosted on servers that vary massively between RSPs etc.

I've confirmed with the OP, it's definitely the cable between the modem and ONT dropping down to 100mbit link state.
so good news is, OP isn't going crazy, he has a valid fault. (Just not one the provider can wave a wand to fix!)
the key detail though is that The modem is located at the end of a patched cable, so while he has replaced the points between the modem/jackpoint and ont/patchpanel, it certainly sounds like looks like the fault is in the cable in the wall - I question if it runs along side an AC cable or a mouse has had a little nibble.

Interesting, I've been meaning to replace it anyway as it doesn't suit the look/feel of my rack
