Given the information you have provided us I can see your phone having 1 of 2 issues.

1 It's faulty and needs to be taken to a repair agent.

2 Due to it being off trademe it might not be a NZ New iPhone hence it maybe network locked. Did you recently upgrade the firmware? (This would have sim locked the phone again)

What does a locked iPhone do with a non-approved SIM? Does it spit out any error messages?

It shows 1 bar of service, but won't connnect to any network.

when you go into Settings-->General-->About,  What modem firmware is listed?
