My wife (Skinny) is unable to SMS her father (Spark). There seems to be finger pointing back and forth between the two carriers but no one is able to help us out. Then I found this thread - and can describe identical behaviour.

Skinny and Spark are one and the same company. There should be no fingerpointing.

This only happens to me after I try to send a text using the google assistant, after that that contact is blocked in the messages app.

yes, this has happened to me on several occasions (skinny to skinny).
I now just avoid trying to send an sms using google assistant.

Agreed, but that was the type of response she's been receiving asking their frontline staff.

I've just had a look myself after digesting all this, looks like clearing cache and data in the Messages app has resolved it for her. Definitely seems to be something that puts it in a bad state, but I've got no insight in to what kicked it off, it's been that way for a while.

For anyone else wondering - if you're backing up your SMS to your Google account, this process does not wipe your messages. (I wasn't 100% initially, but they came back down once we re-opened the app).
