Ragnor: It's going to be hard to get an increase in latency from 30ms to 50ms to an AU CS server in peak time to be taken seriously as a fault, it's just mild peak time congestion on a consumer grade plan.
Do you see this problem on other AU servers? I mean it does look like the increase starts in Spark (Global Gateway's) network though.
Maybe if Talkiet has some spare time he could take a look and figure out where the congestion is occurring for you (backhaul, handover, core, upstream etc), could make an interesting GZ post...
