SMS works without any necessary changes when I put my XT SIM card in my iPhone. So, question is, how to I find out what SMS Center number has been loaded on my iPhone for XT?

Try respringing your phone. If that doesn't work, a reset?

I'm guessing your iPhone is not jail-broken. If so, I cannot promise a solution if reset.

Its a matter of personal preference, but it is much easier to customize your looks and settings if you decide to.

If reseting does not help, and an carrier update from itunes does not help either, I do not believe it possible to switch your icon back.

If your iPhone is jail-broken, I suggest installing extended preferences from cydia/icy and renaming the carrier to XT. :p
