Just curious on what does smartphones display as 'operator name' on top left for MVNOs.
For e.g. for Skinny customers does it show 'Skinny NZ' or 'Spark NZ'?

Just "Skinny", not "Skinny NZ" on iOS.
VF Talofa is shown on my i7 at the moment. Changes quite often.

Depends on you device - For MVNO's (Excluding Skinny) on iOS it normally shows Spark NZ / or Skinny for the likes of Orcon Mobile, Android Devices show either the MVNO name or both.
e.g. Trustpower Mobile shows as Spark NZ on iOS devices but TPMobile on Android.

Kogan Mobile on iOS shows whatever Vodafone NZ's operator name is currently(VF Talofa!).
But Kogan Mobile on Android shows KOGAN MOBILE(Why does it have to be in all caps?)

I'm sure I have seen 'Warehouse' or similar on Android devices with a WM SIM. Have been away from the iOS ecosystem for a long time so can't comment there. It'll depend on the device though and where it appears. Some devices will respect the MNVO name and show it in certain areas such as the home screen etc, but use a built-in lookup table to show the actual network names in other places (e.g. network search).
Skinny shows as Skinny as observed by others. Though network search etc may show Spark.
