AFAIK most emoticons sent in text messages, will not be accepted by the other phone. They tend to be brand/model specific, and different phones interept them differently, so on the whole they will not be displayed.
Being unable to look at the app here at work, have you made sure XT is supported by the app? Have you contacted the creator to see if they know of a fix, or if there are known issues? Does it work when using a VF sim on the VF network?
I managed to find a website www.iphonewzealand.co.nz which has carrier packs to fix various problems with the iPhone operating on the networks, including the XT. Having downloaded the carrier pack and installed it tsome of the fixes that it is meant to fix have not worked. I have spent a long time with Telecom 126 and they were uinable to help other than to assure me that my plan is all in order. I then had a look at the forums on www.iphonewzealand.co.nz and find I am not alone with the problem.
As previously mentioned "emotions" such as Emoji Emotions are nothing to do with the carrier but are to do with the device. The iPhone doesn't support emotions out-of-the-box and you have to install an app to get them to work, however they can only be received by other iPhones or mobiles that have the same emotions installed.
If it is "emotions" that don't work for you then this is not something that can be "fixed" without buying everyone you know an iPhone and installing the app for them. The iPhone does not support them out-of-the-box.
I have posted a reply to you in our forum on the site around the carrier bundle so won't repeat it all here, but if it is MMS that is not work for you then please see my reply in our forum.

I have done another test using my sim card in another phone (Sony Ericsson). With that sim card I managed to send a MMS photograph. I cannot send photographs using MMS in my iPhone with the same sim card so I figure it is an iPhone problem.
The problem has been fixed. In summary. New phone bought from Apple New Zealand and put on the XT network. I set up Exchange for work synchronisation of Outlook and a personal email address with no real difficulty. I then found that the voice mail icon did not work, and sending photographs by MMS did not work. After many phone calls to Telecom and Apple I was directed to the website http://www.iphonewzealand.co.nz to download the XT carrier bundle. The download went easily enough. Installing the bundle initially fixed several of the issues (voicemail icon worked, and XT symbol was put on the toolbar). Photographs could still not be sent through MMS. I checked using my sim card in another phone to make sure the MMS function worked, which it did. Then I was directed to reset as follows- Settings -> General -> Reset -> Reset Network Settings. It fixed the problem.
The other thing that I managed to establish is what smiley faces do and do not work. "CLIPish" downloaded from Itunes Store will work to any other mobile MMS capable except the animation does not seem to work. There is another programme available called "Spell Number" . These smiley faces only work to another iPhone.
