Stu: Keep in mind many hobbies are already discussed in existing sub-forums. Some creative hobbies under DIY, photography comes under Digital Imaging, RC under Gadgets, board games could fit under gaming, etc. Whilst they would be at home under a Hobbies sub-forum, they also fit in the existing locations.
I think a Hobbies forum is a good. Someone browsing or maybe looking for ideas for a new hobby will have a lot easier time finding something if they are all in one place. Yes they do fit in other forums, but often the other forum topics are so broad there is a lot of "Chaff" to filter through.

Perhaps add hobbies to the DIY Workshop Forum? It's probably not going to massively increase the threads and clutter up the existing forums to the point it's not practical. Might be a burst of threads initially, but overall not so much.
you are far better off going to a forum dedicated to that hobby.
You may only get 1 or 2 people here actively involved in your hobby.
