Can you provide us more INFO,

Are you trying to send over a mobile network or connected to WiFi to a home network?

What smtp setting are you using now?

If you are using the Paradise SMTP via a mobile network then it won't work. Most ISPs block access to SMTP without authentication to prevent spam.

How do I authenticate? Is there a guide somewhere for setting all this up?

What smtp address are you using now?

Is the home WiFi network connected to which ISP?

You'll find Paradise mail isn't as friendly as other ones. I suggest you sign up to Gmail and fetch mail from your Paradise. Then you'll have IMAP on your mobile instead of POP.

So there is no option at all then?
I am currently going through Gmail as mentioned above but I can't get my email when i want it, only when paradise send it out.
I was using windows phone for email previously and it was fully functional.

Instead of having Paradise sending emails out you can configure Google to connect via POP and download the emails for you as posted in the link above.

It's not when Paradise sends out but when Google checks for new mails.

That's correct. And I believe Google checks every hour. Unless you click "Refresh" button when logged into the Google webmail.
