So I'm hoping someone directly from Vodafone can shed some light on this,

I'm interested in getting Vodafone Cable installed. I checked the website to see if it was available to my house and according to the website, it was.

So I went through the sign up process and all was good. I heard nothing for about a week so I chased up the order and was told that they have contacted Chorus, apparently I can't actually get cable.

I find that kind of odd because there appears to be F type connectors at the wall at various points labelled INTERNET and I thought Vodafone owned their own cable network, why are Chorus involved here? I'm wondering if the sales team have got confused between fibre/VDSL/something?

Might be referring to Downer, You may have the jacks but doesnt mean you have the cabling to the house.
E.G, You got electricity points but its not wired to the grid. Might need to further look into. @NikT

Send the DM as requested. When we moved to this house a few years ago TelstraClear said they couldn't service the address - even though the then owners' only telephone and Internet service was TelstraClear cable.

They sometimes have those "senior moments".
