i was wondering.. do you really need to have two sims to run the dual sim phone or is one alright???

Which dual SIM phone? You say "the dual sim phone", but there is more than one model in existence.

With one SIM in any dual SIM phone I know of, you will still be operating just fine, but your second SIM will not be active if it's not plugged in there...
