Hi, roaming in the UK and iPhone 7 keeps asking me to update carrier settings.

Is this s good idea or will it impact me when I return to NZ?
(Or shall I assume it's ok given it's an update for VF UK only)?

Yes do the carrier settings update and it's not related to roaming and will not impact anything when returning home and the update is not to big

If you go to Settings > General > About then that should prompt the update notification
