Is there any way to modify my vodafone sim card so I can use vodafone and telecom xt as my wireless carriers? In my vodafone phone options I can manually choose a carrier and I would like to choose between telecom xt and vodafone. Is there a jailbreak for sim cards?

No thats not possible. You can get sim cards which can have more than one number on it, but they can only connect to the network they're assigned to. Unless you're with 2degrees, you can switch between 2degrees and Vodafone I think, or maybe it only goes to Vodafone automatically when not in range of 2degrees. But you can't connect a standard vodafone sim card to Telecom.

Not everyone knows why/how a SIM card does what it does...

It's the latter, if there is no 2 degrees coverage in the area it goes to Vodafone.  This happens automatically and you don't/can't control it.
