Use a syslog server.
I suggest you also reread your documentation and look at your SIP proxy settings as this is incorrect.
If you're not confident configuring a device my suggestion would be to stick with the regular VFX product. With a Linksys adapter there are no real compelling reasons to be on OpenVFX. If you are planning to use the SPA3000 with a PSTN line you'll also get some echo which can't be eliminated. These are a very old pieces of hardware now and don't play friendly with the impedence of NZ phonelines.
