Unless I've missed the point somewhere that's exactly what you get with an eSim.

Most eSim providers do not give you a phone number. Most also charge you up the behind for data.

https://esimdb.com/australia

Here's a great comparison page.

That doesn't appear to the case if you go with the likes Optus. https://www.optus.com.au/prepaid/plans/flex?&ca_chid=2003037&ca_source=gaw&ca_ace=&ca_nw=g&ca_dev=t&ca_pl=&ca_pos=&ca_agid=125665149296&ca_caid=12908333221&ca_adid=536162304179&ca_kwt=optus%20esim&ca_mt=e&ca_fid=&ca_tid=kwd-349461803230&ca_lp=9071387&ca_li=&ca_devm=&ca_plt=&ca_sadt=&ca_smid=&ca_spc=&ca_spid=&ca_sco=&ca_sla=&ca_sptid=&ca_ssc=&gclid=EAIaIQobChMIw_D4koqz9AIV8oJLBR2FGQ4zEAAYASAAEgIgG_D_BwE&gclsrc=aw.ds

Seems to me it's exactly the same price, eSim or physical sim. I don't know why you'd use any of the providers in your comparison.

Was unaware of Optus supporting eSim because I don't actually look at Australia! Only Japan and Canada(future holidays)! Nice one Optus.

Optus aren't on their own, Telstra also in Oz. I'd be surprised if the local Telcos in Japan and Canada don't already offer or won't be offering eSims in the near future.

Woolworths Mobile Australia has SIM -> eSIM now and they're going to add eSIM signup H1 2022 along with VoLTE so I'm watching it intently.

I've ordered an esim.me sim for future use. I'll report back once I have tried it out.
