We are moving to a property with no broadband. I work from home so have to hook into a vpn. I am logged in for about seven hours a day . wireless is looking like my only option but am wondering if there is a latency with wireless as that will affect my ability to work effectively

Depends on the wireless service and how good signals are in your area. If you get RBI and have problems you could get bigger antennas with higher output. Alternatively you could look at installing a p2p link to a site that does have UFB or broadband if you have a clear line of sight.

yes there will be latency (its called physics)

maybe describe the sort of work you want to do thru the VPN?

I log onto my work server access an RDP via a 3399 port for approx seven hours a day. I make notes in my client database and put sales on my sales sheet. So dont want too much lag.

The fact you're using a VPN is largely irrelevant here - what is important is that you're using RDP.

Wireless will make no difference to a VPN, but the fact you wait fairly sustained throughput for RDP is very significant, and will use a fairly significant amount of data for 7 hours per day.

I have no issue using VPN's or RDP. Beware, some RBI Wireless providers use CG-NAT, Ultimate do not. CG-NAT can effect some VPN and RDP sessions.
