Seems bit fishy as Vodafone does not support esims so how can MVNO do esims if network does not support it.

eSIMs have been supported in NZ for quite some time using roaming agreements. Just hasn't been offered by the carriers domestically as there is a bit of set-up involved and hasn't really been the demand for it. It's how Apple has been able to offer the Apple SIM, as well as the built-in support for Truphone, Always Online Wireless & GigSky on the iPads.
