I have a Polycom RealPresence 500 videoconference unit which is SIP capable.
I have successfully configured it to work with a 2Talk account, however the volume the recipient of calls from the Polycom unit hears is a bit low.
There does not appear to be any adjustment on the Polycom to adjust microphone levels for SIP, so I was wondering if it is possible to adjust the amplification level on a specific 2talk account, or is there some other way to achieve this?

sound levels have nothing to do with sip, look at volume level settings of the phones, used to carry out the call.
