I know this isn't a strictly VOIP question, but presuming all passwords are at default, does anyone know what I need to do to re-record the autoattentant greeting which is the message which comes up when people call our number? IE Welcome to xxx, please wait, and someone from our team will assist you shortly.

The useless people who installed our system didn't bother to train us on all this, and never left a manual or anything.

Also anyone know a place to get IP Phones for this system cost effectively?

Samsung systems all use proprietory handsets.

Anybody who sells Samsung systems would be able to supply phones, the question would be whether you could configure them or require their help.
