I had a RAID set up for my PC over 2x 500GB disks.
A while ago one failed and I installed windows 7 back onto just one disk.
I'm going to do my RAID again - does my new second disk need to be exactly the same as the other?
what matters here?

It very much depends on the setup, but typically speaking, no. Storage and access speeds will however be determined by the smallest, slowest HDD.
Try Vultr using this link and get us both some credit:
andrewNZ: I'd also ask what you're trying to achieve.
If you want to protect against downtime due to disk failure, then RAID is an OK option. Although not great if you're not familiar with it IMO.
If you're looking to protect data, RAID is a poor choice, you need backups.
