Hi there

Soon I shall be configuring my new laptop which will contain emails from this laptop. I know the .pst file I will copy across contains emails, the calendar, and contacts. However I don't think it includes email addresses that aren't in my contact list but I've sent emails to anyway. Is there anyway to copy those to the new computer? It's fine if there is no easy way -- I will just resort to writing them down.

older versions of Outlook no longer uses a .nk2 file to store the Autocomplete entries

another way is outlook.exe /omportnk2
google for instructions.
As above , newer versions on outlook dont use NK2, but can still import nk2's
So, your old version of outlook may not have a nk2 to use, depending on what version you had.

Using the program, it does list the email addresses that pop up when I go to type in an email address. But as per https://support.microsoft.com/en-us/kb/2806550 I don't see a .nk2 file in Drive:\Users\Username\AppData\Roaming\Microsoft\Outlook (even with show hidden files ticked). So I don't know where the program is gathering its information from.

What version of the old Outlook ??? thats need to know information :-)
Outlook 2010,2013 etc dont use the nk2.

Otherwise, there are plenty of programs to export the autocomplete addresses.
In general , autocomplete cannot be relied on , as a reliable store for contacts . In future , save to contacts .

NK2Edit can see both the older .NK2 files as well as the newer autocomplete .dat files. Just select the appropriate file type from the dropdown in the Open dialog

Office 365 (University), upgraded to Office 2016.

EDIT: it looks like the program is reading the .dat file in AppData\Local\Microsoft\Outlook\RoamCache

Shortly I shall be setting up my new laptop. I have saved the .dat file NK2 gathers its data from to my Documents folder, ready for transfer to the new laptop. Is it a simple task of copying and pasting that .dat file into the same directory it was found, on the new laptop (C:\Users\<username>\AppData\Local\Microsoft\Outlook\RoamCache)?

It appears by copying both the .dat and .pst files across, Outlook on the new machine (with both files being in the same folder, rather than separate on my old laptop) has retained the email addresses.
